Tastes of Gluten Free: Meatless Monday


I have been getting creative lately, while trying to stay within our food budget and tonight's creativity was a winner in my book!  Even the kids ate it!  It was super easy, super tasty and I am guessing going to have even more flavor tomorrow as those leftovers have a party in the fridge all night long!!

Mexican Quinoa
2 cups uncooked Quinoa
1 packet of taco seasoning (or make your own with this great recipe)
1 cup diced onion
1 can of black beans drained and rinsed
1 can of corn (or can use frozen or fresh)
1 can of diced tomatoes
1 8oz can of tomato sauce
garnishes: guacamole, sour cream or low fat plain yogurt, cheese, tortilla chips

Cook quinoa according to package directions and add taco seasoning to the water.
In a large skillet saute the onion and then add the rest of the ingredients, except  tomato sauce garnishes. When quinoa is done add it to the bean and corn mixture and pour tomato sauce over and stir until combined.  Heat through.  Garnish with guacamole, sour cream or low fat plain yogurt, cheese, tortilla chips and enjoy the party in your mouth!!
